His parents worked so much that young Yama had to learn early that if he wants to eat nice and homemade then he has to make his own. His mother though always bought the best quality ingredients. Yama didn't even know much about flavour enhancers for a long time. He started cooking school at the age of 19 and after his University studies he got the chance to study abroad and this is how he arrived to The Netherlands.
Yama hardly met europeans at his first job in Hotel Okura where he was surrounded by many other Japanese colleagues. Now he has his own restaurant in Rotterdam where one of his most important aim is that the guests must always recognise what's in their dish.
