Rick & Julius
Julius Busscher got to know Rick Swinkels on a busy food festival at the sea because he needed some help with cooking. In Noordwijk aan Zee in Holland everyone knows everyone so he didn't have to look for a long time to find the perfect chef. The partnership became a good friendship and 3 years later they opened their own restaurant, Staets in Amsterdam.
Since 2013 the guys are inseparable. They launched their own business, built their own foodtruck. It's called De Filostoof and arranged a whole new festival around it. A food festival where quality is the most important aspect. After the succes the next step is their pop-up temporarily restaurant.
The name of the restaurant comes from Hendrick Jacobsz Staets who was one of the planner of the canal belt in Amsterdam and major planner of the Keizersgracht in early 1600. When I asked them which one of them is the chief in the kitchen they say they always decide on everything together. This can only work in perfect harmony. When we were there Julius made the main courses and Rick prepared the entrées. Later on they swapped.
They moved in the building but it took a few months before they could really open for the public. They shaped the restaurant to their own taste with also the help of their third partner Adriaan Verkerk. Becasue of the graphic studies of Rick, he made the identity of the restaurant which makes it quite personal. The foods also represent their style, Rick likes to work with mostly with fresh fish and Julius is passionate about patisserie.
Theoretically they can stay in the building until december, but they already planning the future as the place has many promising possibilities. Above the restaurant there is a spacious ballroom and on top of that there is roof terrace where from whole Amsterdam can be seen beautifully. The owner of the building is also satisfied with the restaurant.
Rick and Julius work hard for the succes. They work 24/7 and because of that some of the friends and family are also in the business. Not even thinking about relaxing, they believe 2016 is about mobility so they have further food truck plans. They also have other plans but if I'd write those sure they'll kill me.
