Ulises Bendala Rodriguez is master of the Iberico ham, he finds quality the most important aspect and Michiel is a good partner with that. They get their ingredients straight from Spain, all the highest quality and ecologically qualified.
On their classic plate you can try Manchego cheese, hand carved pieces of Iberico ham and chorizo. Their grilled sausage the Chistorra, and their gazpacho are both self made.
Grilling and bbq-ing is incredibly popular in holland all through summer. Mostly everyone has some bbq experiences so Micihiel often gets critics for grilling the sausage in the flames. He always answers very politely and explaining that Spanish sausage has lots of fat in it and that's the reason why traditionally it grills right in flames instead of over the ember.
