Jim de Jong opened his restaurant at the age of 21 and he grew up for the challenge meanwhile. He is very good in multi tasking (although he was joking a little and said; can not concentrate on more than 4 or 5 things at the same time), supervising the kitchen and the whole staff while also be kind to the guest, just as really good chefs are doing it. Basically the only place where he can be alone is his kitchen garden, so he likes to start his day there and relax for a while.
He was peeling mushrooms during the interview because someone was missing that day but of course the restaurant had to open that evening. Vegetables have a special place in the menu, they like to concentrate on them.
